I’m honoring the Southern traditions of the SEC teams playing in some of the last games of 2010: South Carolina in the Chick-fil-A Bowl, and The University of Georgia in the Liberty Bowl. Such Southern states make me think of wide open fields, local produce, and bountiful farmers’ markets. So, I am putting a few of these nostalgic Southern staples in an appetizer that will get you in the kitchen for only a few minutes, and then back out with friends and family to enjoy your New Years and Bowl Game celebrations!
Place an eight ounce block of fresh goat cheese on a chilled platter, and set aside. In a bowl whisk together 3 tablespoons of local honey, 3 tablespoons of balsamic vinegar, 1 tablespoon of olive oil, and a half teaspoon each of salt and pepper. Drizzle the honey-balsamic mixture over the goat cheese, and then top with shelled and diced pecans, and freshly chopped parsley. Serve with table crackers or thinly sliced pumpernickel bread pieces.
